Upgrade to Windows Server 2003

fe are upgrading our Application Center based web environment to Windows 
Server 2003 Web Edition.  We will accomplish this upgrade with new
hardware; 
there will be no upgrade in place of our current machines.  Our current
web 
environment is Windows 2000 Advanced Server with AppCenter 2000 SP2; there

are 30 websites defined to this environment.  The Release Notes for
AppCenter 
2000 SP2 states:

Regardless of the version of Application Center you have installed, do not

perform out of cluster deployments between a cluster whose servers are
using 
a version of the Windows 2000 Server family operating system and a cluster

whose servers are using a version of the Windows Server 2003 family
operating 
system.

It appears that this kind of activity will corrupt the IIS 6.0 metabase.  
Based on the above statement, what is the recommended method of 
"moving/deploying" the web sites from the Windows 2000 AS environment to
the 
Windows Server 2003 environment?
